Grist Mill Restaurant and Chef Jayro Cruz
Our Grist Mill Restaurant has long been a favorite of both guests and neighbors alike. Many restaurants in Washington DC cater to the expense account crowd, but our restaurant is focused on providing excellent comfort food at a reasonable price point.
The restaurant is named for the many Grist Mills that were found in the mid-Atlantic, powered by either water or farm animals to grind wheat and corn into flour, corn meal, grits, etc. Most Grist Mills in the region are historic sites currently, but there is still an operational one found on the estate of George Washington, Mt. Vernon.
The menu changes seasonally in order to take advantage of the bountiful local seafood, produce, and meats throughout the mid-Atlantic region. We pride ourselves on using the freshest possible local and organic ingredients, whenever possible.
Our menu is crafted by Executive Chef Jayro Cruz. A native Washingtonian, Jayro has had leadership positions in some of Washington DC's best restaurants, including James Beard award-winning Vidalia, and the ever popular Le Diplomate.
Chef Jayro is driven to create food that people want to eat, rather than Chef's want to cook! In an era of entrée’s with 30 ingredients most have never heard of, plated every so delicately with tweezers, a solid plate of food cooked simply and with loving care is what has always inspired Jayro, and been well received by our guests.
Guests short on time love popping into the Bar to sample one of the many local craft brews, a stunning glass of wine from the region, a light bar snack, or a craft cocktail using the finest local distillery offerings, we are sure that you'll be delighted with everything the Grist Mill Restaurant has to provide.
Cocktails and bar bites are serve in the Grist Mill Lounge each night, featuring local craft beer on tap, in bottles or cans, as well as exciting featured wines from around the globe and elegantly crafted cocktails using local spirits and the finest of ingredients.
A freshly prepared breakfast and dinner are offered daily in the Grist Mill.
The Pavilion Pantry convenience mart offers sundries, an assortment of beverages and ready-to-cook meals bound for the in-room microwave oven or refrigerator.
